Sweet and sour dill dressing

This recipe is a version from Gunner Karl Gislason’s book, North. An amazing chef that has been an inspiration over the years

Ingredients

300ml rapeseed oil

75g dill

300ml cider vinegar

250 sugar

Preparation

Blitz together in a high speed blender until emulsified. You can add a bit of xantham to give body

Season to taste with a little salt
