Pipian rojo

Incredible sauce served with grilled vegetables or meats


3 dried quajillo chilles

2 ancho chilles

2 tbsp oil

3 garlic cloves

4 shallots chopped

2 bay leaves

1 tsp dried  oregano

½ tsp ground cumin

½ tsp sweet paprika

Pinch cinnamon

800ml water

120g pumpkin seeds toasted

2 tbsp sesame seeds toasted


Sweat down shallots and garlic

Add spices and chillies cook out add water simmer for 20 minutes

Reduce by half and blend

Add seeds
